Our Tuscan Blend is produced from Italian varietals grown in the central valley of California...Lucino, Frantoio and Pendolino.  The olives are pressed later in the Fall to soften the bitterness.  As I learned living in Italy, this is a classic Italian varietal combination and it results in a very similar oil to that you would experience in Tuscany.
