The Ligurians were an ancient people who gave their name to Liguria...which once stretched from Northern Italy into Southern Gaul. They are very serious about their devotion to pesto sauce and its main ingredient, fresh basil.
There is no consensus on the best recipe for pesto and every village seems to have its own and, or course, its favorite shape of pasta to go with it. The Genovese prefer a sharp, pungent pesto sauce served with ravioli filled with veal and cheese...others make a more mild sauce. I prefer pungency...in all aspects of life...but most certainly in my pesto. That is why I chose this particular Pesto Alla Genovese.
Pesto can be added to any pasta, vegetables or potatoes. I love the classic pesto, pasta and parmesan but it can also be added to Minestrone and White Bean Soup as well.
