Our pastas are made by the Marella family, who run a factory in Puglia, Italy, the heel of the boot and an important region for pasta production and consumption. They make these simple, flavorful pastas the same way they made hundreds of years ago: by hand. They are made from locally-grown durum wheat and water, and extruded through bronze dyes, which give the dried pasta a rough texture to better hold sauce. The pasta is also dried at a low temperature, which allows it to absorb more water and cook up to a larger size.
Trottoloni, which means "spinning tops," are beautiful, large coils that are good with any sauce. Try them as a base for a decadent macaroni and cheese.
