Our sparkling wine vinegar is made from a 10 year old Napa Valley Sparkling Wine.  We are the only American producer to make a "champagne vinegar" out of true champagne or sparkling wine; most are made from a combination of white wine vinegar and yeast. We processed the sparkling wine in stainless steel in order to retain its true character. It's one of my favorite products...it's light and fruity and pairs beautifully with our Lemon Extra Virgin Olive Oil.  This product is limited.
