As our life unfolded in Florence, I finally came to the realization that my insalata verde would most likely always show up undressed...with no option for cover except for that which stood at attention on almost every table...extra virgin olive oil and vinegar...usually red wine vinegar.  At first, I struggled with the disappointment until suddenly I realized....I had judged my salad by the dressing it wore...not by the greens that it was. 

In order to fully understand the salad, I delved into a bit of history.  It turns out the Babylonians enjoyed greens with oil and vinegar 2,000 years ago.   The Romans loved salt on their greens and eventually honey was thrown in the mix (no pun intended).  It wasn't until the Kraft family got involved that the whole kitchen sink was added.  This, I believe is where our attention began to shift from what greens were to what they wore. 

Florence taught me to love, not only the nuances of the different oils and vinegars, but the greens themselves.  She revealed the power of simplicity when using quality ingredients..and she inspired me to create this gift set..so you can feel the same.
