The organic figs are rolling in so we are not wasting any time! This year we have decided to create a puree from the figs by adding a little water and running them in a blender....it seems to release more of the sweetness of the figs. We then bottle the puree with our older style premium Balsamic Vinegar and let it infuse for a week or so. We prepare this by bottle....and then shake the bottle every couple of days to ensure immersion. It's a labor of love so production is always small to begin.....10 cases at a time!
